Here's a healthy, hearty beef stew recipe that is perfect for fall!

Ingredients
3 1/2 oz. beef for stewing
1 cup fresh potatoes diced
1/4 cup yellow onion chopped
3/4 cup carrots diced
3/4 cup fresh celery diced
1 cup low sodium beef broth
1/4 cup light beer
Instructions
Coat pan with non stick cooking spray and saute beef on medium high heat for 5 minutes or until brown on all sides; set aside. In another pan, saut potatoes, onion, carrots and celery on medium heat for 3-5 minutes. Add beef broth and light beer and simmer for 20-25 minutes or until vegetables and beef are fork tender.
